Feed Your Body, Mind and Soul With Quiche

I do love quiche.
It's rich, simple, and delicious.
Here's a simple sunday picnic or indoor brunch recipe:

Goat Cheese, Leek, Mushroom and Brocoli Quiche
















1 tbs buter
1 medium leek thinly sliced into ringlets
2 medium cloves of garlic
handful of brocoli
1/2 c milk
4 eggs
salt and pepper to taste
3 medium to large button mushroom, sliced thinly
1/2 log of goatcheese, sliced thinly
(Cheat on the pie crust and use pre-made store bought crust, or even pilsbury cresent rolls, to line the container)


Directions:
1. Beat 4 eggs with 1/2 cup of milk. Sprinkle in salt and pepper.
2. Saute in 1tb of butter leeks, and garlic. After two minutes add the brocoli.
3. Mix the sauted veggies to the egg mix.
4. Pour into container with the pre-made or timespent pie crust.
5. Layer goat cheese on the surface.
6. Lay the mushrooms on top of the goat cheese. (You can brush it with egg if you want it golden brown)
7. Bake at 350F/170C for 20 minutes or until your fork comes out clean. :)

Reasons why you should eat:
Leeks- great source of vitamin c, iron, and yes FIBER

Brocoli- is known as a cancer preventing super food. moreover, some think it helps trim belly fat, if that's what you're into.

Mushrooms-low in sodium and saturated fat it's a great diet food, not to mention packed with vitamin mineral goodness.

Garlic- excellent for your immune system.

Eggs- one of the most complete proteins you can eat!! Also, some studies say the egg yolk isn't bad cholesterol but a way for companies to market eggwhites, and i believe that. plus the yolk is the best.

  1. This is an absolutely delicious recipe. Nothing beats such a filling, warming dish on a rainy day. It's hearty without being heavy, and the goat cheese adds the perfect amount of salt and contrast to the savoury eggs and mushrooms.
