Couscous Summer Salad

Ingredients:
1 cup Couscous
1/2 cup Chicken stock
1/2 cup Water
1/2 cup Chickpeas
1 Carrots chopped
1/2 Onion (red preferably) chopped
1/2 Cucumber chopped
Roasted Red Peppers from jar or homemade
1 clove garlic
Handful of parsley and mint


Steps:

Cook couscous with fresh minced garlic in 1/2 chicken stock 1/2 water until fluffy.
Mix olive oil, lemon, and vinegar in a bowl. (2parts oil to one part vinegar and a squeeze of lemon)
Add to vinaigrette the chickpeas, chopped onions, cucumber, carrots and roasted red peppers
Garnish with freshly chopped parsley and mint
