MMM...Old Clothes, Delicious

Ropa vieja is a classic Cuban dish which literally translates to old clothes in English. I'm almost positive that this dish gets it's name from the fact that the meat, much like old ratty clothes, falls apart. Thankfully, this is a good thing when it comes to succulent meat. So, wherever you are, and whatever you're doing, STOP, and try this dish because it's easy and damn tasty.

Ropa vieja with chicken
1lb chicken thighs, bone-in skin opt.
1/2 green bell pepper sliced into slivers
Handful of green olives
5 cloves garlic diced
1/2 medium onion diced
1 can plain tomato sauce
1 tbs cumin
1tbs paprika
1 bay leaf


Gremolata Topping
Fresh chopped parsley
1 large clove of garlic
2 tsp lemon zest and salt
Chop the garlic in the herbs to mix the flavors. Add the zest and salt and toss gently.

In a pot over medium-low heat saute the onions and garlic.
Add the cumin, paprika, and bell pepper.
Add the chicken.
Add the tomato sauce, olives, and bay leaf.
Cover and cook on low, however it should be boiling, for 30-40 minutes.
The meat should fall from the bone when it's done.
Sprinkle the gremolata over the meal. :)
Voila! Easy-peasy cuban.
